Black Bean Burger with Curry Aioli Paired With HammerSky Chardonnay

When I tasted HammerSky Chardonnay, it was delicious!, Citrus, vanilla, apricot graced my palate. The mouth feel was well rounded. When that happens with a white I know this bottle can stand up to bolder flavors and will not get lost. I wanted to create a dish that is super flavorful with umami flavors, a creamy mouth feel and also has a spiced character in the dish. When I say spiced I mean spices, not heat like in spicy. I rarely work with spicy food because it competes with the wine and I want everything to compliment each other.




Black Bean Burger (serves 4)

Ingredients

(2) 14 ounce can black beans

1 tablespoon extra virgin olive oil

1/2 red bell pepper, chopped

1/2 large onion, chopped

3 cloves garlic, minced

1/2 cup bread crumbs, use oat flour for GF option

2 eggs

1 teaspoon salt

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon paprika

2 tablespoons mayonnaise

pinch of salt

4 whole grain hamburger buns

butter lettuce


Ingredients for Aioli

1/2 cup of your favorite mayonnaise

1 tablespoon curry powder

1/2 teaspoon champagne vinegar

1/4 teaspoon salt




Directions

Preheat oven to 325


Drain and rinse the black beans, place a sheet of parchment paper down on baking sheet and lay the beans out. Bake for 10 minutes to dry the beans


In large skillet, heat on medium heat, add olive oil. When olive oil is warm add red pepper, onion, garlic, salt and saute for 5 minutes. Add the cumin, garlic powder, paprika and stir for one more minute until the spices get toasted.


Using a food processor (if you do not have one you can mash and stir ingredients together with a fork and spoon, just a lot more work) Add your mixture that is in the skillet, bread crumbs, mayonnaise and eggs. Pulse until incorporated. You do not want to blend so it becomes mushy. Add the dried black beans and pulse again. Remove this mixture and add to large bowl. Divide in 4 even burger portions and shape into patties.


Preheat the oven to 375


Add your patties on parchment covered baking sheet. Bake 10 minutes, flip and bake for another 10 minutes.


While patties are baking mix mayonnaise, curry powder, champagne vinegar and salt together in medium sized bowl.


Assemble your burgers! Bun, black bean burger, butter lettuce and curry aioli.


Take a sip of that delicious HammerSky Chardonnay, take a bight of the burger and finish with another sip. The contrasting flavors of the burger with the curry aioli to the citrus and vanilla notes in the chardonnay meet in the middle and marry in flavor. Go ahead, you can moan now. uhhhhgggg!!!!!
