Iron Oaks Sirloin Tip Roast

This winemaker dinner is a little different this year with the pandemic. If you where the small few that made it, then you have tasted this roast and pairing. If you didn't make it, you can still create our main course. Purchase your sirloin tip from Doug at DD Cattle Company and grab your bottle of Country Line and you have a perfectly paired evening.


Sirloin Tip Beef Roast

8 servings


Ingredients

3-4 pound beef sirloin

2 tablespoons olive oil

4 medium onions, sliced

1/4 cup soy sauce

1 cup brewed coffee

1/2 cup butter

1/4 cup flour

2 bay leaves

2 clove garlic, minced

1 tablespoon oregano

1/2 teaspoon black pepper

1/2 teaspoon salt

salt for marinating


Directions


Step 1

The day before dry the roast and heavily salt, wrap in plastic wrap and let sit overnight


Step 2

Pre-heat oven 325'

In large sauce pan, preheat olive oil. Remove the plastic wrap from the roast and dry off with paper towel. Pepper the sides.

Sear the meat on all sides to get a good crust.


Step 3

Remove the meat and add butter, scrapping all the bits and pieces. Whisk in flour until the flour browns. Now whisk in soy, coffee, garlic, oregano, salt and pepper.


Step 4

Add sliced onions and beef back to the liquid. Cover and cook for 4 hours


Step 5

Remove from liquid and let rest for 15 minutes. While the meat is resting reduce the gravy on medium heat. Taste for salt.


Step 6

Slice the meat thin and top with gravy. I served with roasted miso rubbed carrots and Duchess potatoes.


Step 7

The most important! Open that Country Line Red Wine Blend and serve with the roasted sirloin tip dinner!
