One of my favorite things to do when pairing with a red wine that carries rich characteristics, is make a dish with citrus notes. The acidity cuts the richness and makes for the perfect pairing. That is why when tasting "the New Deal" by HammerSky, I wanted to pair with a ceviche. Living in California I am so lucky to be able to get the freshest seafood. Rock Fish is meaty, clean tasting and works really well with a ceviche. If you cannot get your hands on rock fish, try a red snapper.
Triple citrus Rock Fish Ceviche
Ingredients-
1 pound skinless rock fish, cut into 1/2 inch dice
1/2 cup lime juice
1/2 cup orange juice
1/2 cup lemon juice
1 medium onion, chopped
2 medium tomatoes, chopped
1/3 cup chopped cilantro
1/3 cup green olives, chopped
salt
1 large avocado, peeled, pitted and diced
Plantain chips for serving
Directions-
In medium bowl add diced fish, lime juice, orange juice and lemon juice. Gently toss and let sit in refrigerator for 1 hour
Take another bowl and add onions, tomatoes, cilantro, olives and avocado. Salt for taste.
When fish is finishes marinating, drain some of the juice and add the fish to the 2nd bowl of ingredients. Toss and keep refrigerated until ready to eat.
Serve with plantains and a glass of HammerSky Red Blend "the New Deal"
